I am delighted to be sharing a most delicious brownie recipe with you today. This recipe is inspired by the Swedish "kladdkaka", a slightly under baked brownie that is soft and gooey in the centre and crisp around the edges. Instead of being filled with sugar and refined flour and oil, this recipe features wholesome, nourishing ingredients. It might be the most delicious, yet nourishing brownie you will ever get your hands on. Gluten free, refined sugar free, plant based and utterly delicious. Happy baking!

This is possibly the most delicious, yet nourishing brownie you will ever get your hands on. Gluten free, refined sugar free, plant based and utterly satisfying.

INGREDIENTS

  • 2 cups dates, soaked 15 minutes in hot water

  • 2 cups almond flour

  • 1 tbsp ground flax seeds

  • 1/2 cup cacao powder

  • 1/4 cup coconut sugar

  • 1/2 tsp sea salt

  • 1/4 tsp bicarbonate

  • 1 cup water

  • 1/2 cup almond or coconut milk

  • 1 shot espresso (I use decaf)

  • 1 tbsp coconut oil or ghee, melted


DIRECTIONS

1. Add soaked dates and water to a food processor or blender and blend until smooth.

2. Transfer the date paste to a large bowl. Add the remaining ingredients and stir well.

3. Spread the mixture out into a lined tin.

4. Bake in the oven at 200 degrees Celsius for 30 minutes.

5. Let the brownie cool for at least an hour before serving. It delicious served with a spoonful of coconut yoghurt and a drizzle of maple syrup.
